Palli Podi

Ingredients:

  • 1 cup peanuts
  • 10-12 dried red chilies
  • 1 teaspoon salt (adjust to taste)
  • 4-5 garlic cloves

Recipe :

  1. Dry roast the peanuts in a pan on medium heat until they turn light brown in color. Remove from heat and let them cool down.
  2. Once the peanuts have cooled down, remove their skins by rubbing them together with your hands.
  3. In the same pan, roast the dried red chilies until they turn crisp and slightly dark in color. Remove from heat and let them cool down.
  4. In a mortar and pestle, pound the garlic cloves to a coarse paste.
  5. In a grinder or food processor, add the roasted peanuts, red chilies, and salt. Grind them into a coarse powder.
  6. Add the garlic paste to the ground peanut mixture and mix well.
  7. Taste and adjust the salt if needed.
  8. Store the Palli Podi in an airtight container at room temperature for up to a month.
