
Ingredients:
- 1 cup peanuts
- 10-12 dried red chilies
- 1 teaspoon salt (adjust to taste)
- 4-5 garlic cloves
Recipe :
- Dry roast the peanuts in a pan on medium heat until they turn light brown in color. Remove from heat and let them cool down.
- Once the peanuts have cooled down, remove their skins by rubbing them together with your hands.
- In the same pan, roast the dried red chilies until they turn crisp and slightly dark in color. Remove from heat and let them cool down.
- In a mortar and pestle, pound the garlic cloves to a coarse paste.
- In a grinder or food processor, add the roasted peanuts, red chilies, and salt. Grind them into a coarse powder.
- Add the garlic paste to the ground peanut mixture and mix well.
- Taste and adjust the salt if needed.
- Store the Palli Podi in an airtight container at room temperature for up to a month.
